Serves 4
Ingredients
- 16 oz frozen chopped spinach, thawed
- 2 Tbsp butter
- 2 Tbsp diced onion
- 2 garlic cloves, minced
- 2 tsp Sibley’s Cajun Heritage #1
- 1 Tbsp flour
- ¾ cup heavy cream
- 2 oz cream cheese
- ¼ cup grated Parmesan
- Black pepper, to taste
- Pinch of nutmeg, optional
Directions
- Squeeze the thawed spinach very dry.
- Melt the butter in a saucepan over medium-low heat. Add the onion and cook until soft and lightly golden, about 5–7 minutes.
- Add the garlic and cook for 30 seconds. Stir in the Cajun Heritage #1 and let it bloom with the onion and garlic for about 20 seconds.
- Stir in the flour and cook for 1 minute.
- Slowly whisk in the cream. Simmer for 2–3 minutes, until it starts to thicken.
- Stir in the cream cheese until melted, then add the Parmesan.
- Fold in the spinach and black pepper. Cook gently for 3–5 minutes. Add the optional nutmeg.
- If it gets too thick, loosen it with a splash of cream or milk. Taste before adding any more seasoning.
